Simple Pancake Recipe

I shared this recipe over on Facebook on Shrove Tuesday, but I wanted somewhere more permanent to keep it, so that it's easy to find - because a simple recipe should be easy to find, right! These are the pancakes that I make weekly for the kids - they're a fantastic breakfast as well as any time snack, especially for our picky eater. Here are my biggest tips - combine the liquid ingredients with the sugar first, then add the flour and mix in well. Leave the batter for 10 or so minutes before cooking - the flour doesn’t clump and you get the smoothest batter every time. And, use a good non-stick pan, or create a non-stick barrier by heating a pan gently over the stove and rubbing some neutral oil onto the warm base - this could be the tiniest layer of canola or rice bran oil, wipe it on with a clean/disposible kitchen towel and then add a small amount of butter to the pan. The two fats work together to create a non-stick coating which is great for older pans or pure stainless steel that can tend to stick!


Here's the recipe:

3 extra large eggs (150g raw weight)

150 g full cream milk

50 g flavourless oil (I use rice-bran or extra light olive oil)

50 - 60 g sugar ( I use raw sugar when I make these at home, but use any sugar that you have)

1-2 tsp vanilla bean paste/essence or extract

220 g self raising flour

Method

Combine the liquid ingredients with the sugar and vanilla into a bowl and mix together until combined.


Pour the flour over the top and whisk until the batter looks pretty smooth, a few small clumps are okay and will dissolve over time.


Leave the batter for 10 minutes while you heat a pan on a low / gentle heat - the pan shouldn’t be too hot of the pancakes will burn!  


Ladle some of the batter into the pan and cook for 90 seconds on the first side, flip the pancake and cook for 30 seconds on the opposite side.


If the pancakes are too dark after this cooking time, reduce your heat slightly!


The pancakes should be soft, fluffy & golden Transfer to a plate!
